A luxury villa breakfast is, every morning, a small ritual — whether among the hills of Tuscany, the olive groves of Puglia, or one of Italy’s many beautiful regions. The scent of freshly baked bread mixes with coffee and herbs from the garden: it’s the moment my guests discover that breakfast, in Italy, is not simply a meal.
As a private chef — and before that, a classically trained pastry chef in arte bianca — I believe breakfast is actually the most delicate service of an entire stay. There is no theatre of a gala dinner, no fireworks of a tasting menu: only the truth of simple ingredients, handled with precision and served with warmth.
Every family, every couple, every group of guests has different habits. Some want a light, Mediterranean breakfast built around seasonal fruit and artisan yogurt; others won’t compromise on a full English breakfast; and those who have travelled to Tuscany for a wedding often simply want the perfect coffee and a warm croissant before the most important day of their lives begins.
My work starts before my guests even wake up: selecting local bakers and producers, sourcing farm-fresh eggs, and preparing overnight doughs, homemade preserves, and artisan granola.
